  • 4 slices of thick cut bacon (optional, use 1/3 cup of vegetable oil for vegetarian)
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 1 granny smith apple, peeled, cored and chopped
  • ¼ cup brown sugar
  • 2 lb butternut squash, peeled and cut into 1 inch cubes
  • 4 cups vegetable broth
  • salt and pepper to taste

  1. In a large, heavy-bottom pot, cook bacon until just crispy. Remove bacon, leaving bacon fat in the pot.
  2. Sauté onions in bacon fat until just soft, add apples and sauté for two minutes.
  3. Add garlic and cook until garlic is golden, about 1 minute.
  4. Stir in brown sugar, butternut squash cubes, broth and TEASPOON WILLIE'S EVERYTHING SAUCE.
  5. Boil, uncovered, until squash is tender, about 15-20 minutes.
  6. Working in batches (or using a stick blender) blend soup until smooth.
  7. Dish up the soup and top with a sprinkle of chopped bacon and a drizzle of TEASPOON WILLIE'S EVERYTHING SAUCE. Enjoy!
